The Perfect Grain Bowl
Ingredients
- Building the bowl -
1 cup quinoa, dry
2 cups water
A pinch of salt
1 bunch of kale
4 beets
1 - 15ounce package of extra firm tofu
Salt & pepper
Olive oil for cooking
Fresh broccoli sprouts
Pomegranate seeds
- For the cashew sauce -
1 cup raw cashews, soaked in water overnight
1 cup fresh water
2 cloves garlic
1 teaspoon mellow white miso
Zest of a small orange
Juice from one small lemon
1 teaspoon apple cider vinegar
1 teaspoon tamari
1/4 teaspoon raw honey
Sea salt to taste
 


Ultimate Veggie Sandwich
Ingredients
- Banh Mi Sandwich-
1 small whole wheat baguette, sliced into sandwich sized halves
½ cup extra firm tofu
2 carrots, cut into thin stripes
2 cucumbers, cut into thin slices
Fresh cilantro or parsley leaves
2 tbsp tamari
1 tsp coconut oil
1 tsp rice vinegar
4 tsp coconut oil mayonnaise
Freshly ground black pepper
- Coconut Oil Mayo- 
2 egg yolks at room temperature
⅓ cup extra virgin olive oil
⅓ cup unrefined coconut oil
1 tbsp lemon juice
1 tsp good quality mustard (regular or Dijon)
A pinch pink Himalayan salt


Butternut Squash Ravioli
Ingredients
1 large butternut squash, 1 large
1 bunch rainbow chard, chopped
1 bunch kale, chopped
1 medium yellow onion, chopped small
1 bunch sage,  rolled and sliced
1/4 cup pumpkin seeds, toasted
1 cup raw cashews (soaked overnight in 2 cups water)
Salt
Pepper
 


Peach Caprese Salad
Ingredients
Sliced fresh peaches
Fresh basil
Fresh mozzarella cheese
Balsamic vinegar (reduced)
Whole Natural Almonds chopped small
 


One-Pan Cranberry Balsamic Roasted Chicken (paleo)
Ingredients
2.5 lbs chicken thighs or breasts with skin on (around 4 to 6 chicken thighs or breast)
fresh thyme
a sprinkle of dried Italian herbs (optional)
1/3 cup to 1/2 cup fresh cranberries (or previously frozen)
1 tbsp each maple syrup and balsamic vinegar mixed together to coat chicken during roasting
- For the Marinade- 
1/3 cup cranberries
2 tbsp olive oil
2 tbsp tamari sauce or gluten free soy sauce
2 tbsp maple syrup
1/4 cup balsamic vinegar
1/4 tsp sea salt
1/4 tsp black peppers
2 garlic cloves (or 1 tsp minced)
